Portabello Mushrooms, Fresh Chopped Garlic, 100% Olive Oil, Salt, Pepper, Balsamic Vinegar, Fresh Spinach

Pre-heat oven to 400 degrees. Break stems off mushrooms and discard. Place caps in a baking pan, inside up. Season inside of cap with garlic, salt and pepper. Cover generously with oil and bake until mushroom has appearance of being done, approximately 10 minutes. Mound fresh spinach on a plate and pour oil from pan over spinach to wilt it. Place mushroom on top of spinach and soak inside of mushroom with balsamic vinegar. Eat hot or warm.
