• 2 Heads Romaine Lettuce
  • 1 Cup Croutons
  • 3 Cloves Minced Garlic
  • 2 Anchovy Filets (chopped)
  • Juice of 2 Lemons
  • 1 Cup of 100% Olive Oil
  • 4 oz Grated Romano Cheese
  • Pinch of Salt
  • 1 tsp Black Pepper

Trim, cut and wash Romaine.  Dry well, reserve.  In a mixing bowl, combine all ingredients except Romaine, Croutons, and half the cheese.  Mix well.  In another bowl, combine the Romaine and Croutons, apply desired amount of the dressing and toss.  Transfer to plates and top with remaining cheese.

Refrigerate remaining dressing.
